Tilapia peppersoup
Ingredients:
– 1 whole tilapia, cut into pieces
– 1 tablespoon peppersoup spice (a blend of calabash nutmeg, uziza seeds, and other spices)
– 1 tablespoon ground crayfish
– 3 scotch bonnet peppers, chopped
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon thyme
– Fresh basil or scent leaves
– Salt to taste
– Water
Instructions:
Season the Fish:
Clean the tilapia pieces and season with salt, thyme, and some chopped onions. Set aside.
Prepare the Soup:
In a large pot, bring about 4 cups of water to a boil. Add the peppersoup spice, crayfish, scotch bonnet, and remaining onions. Stir and let it simmer for 10 minutes.
Cook the Fish:
Add the tilapia pieces and garlic to the pot. Cook on medium heat for 10-15 minutes, or until the fish is fully cooked and tender.
Finish:
Add chopped basil or scent leaves, adjust seasoning, and simmer for another 5 minutes. Serve hot with boiled yam, plantains, or rice.
